Success!
Derek on the Yamaha Musicians Forum suggested setting the device number to 20 rather than 10.
This caused the TG100 to burst into life and issue dump messages.
The message I received in response to:
F0 43 20 7A 4C 4D 20 20 30 30 36 38 52 51
30 00 00 00 00 0A
00 00 00 00 00 00 00 00 00 46 F7
exactly matched the first in the "dump all" output here

I hadn't picked up that 20 in the device number specified a dump request and 10 a dump reply. (I still haven't found it anywhere in the manual)
Just to confirm, I sent:

30 02 00 00 00 18
00 00 00 00 00 00 00 00 00 36 F7
requesting the 24 bytes of Multipart 11, and the TG100 responded with:

which again matched the appropriate message in the "dump all" response.
