Hi everyone,
I'll explain my problem:
I use my Nord keyboard connected to ipad to use apps like Sunrizer and iSymphonic, to create amazing layers. But it happens that the Nord sustain pedal sends the midi message also to the app and, with Sunrizer and Isymphonic, generates a great confusion. The two apps do not allow (I think) to block CC messages, and on the Nord I tried all the options in the MIDI menu but without success. What do you think I can do to filter the CC to send and those to block on the iPad?

I don't know, but I think there are hardware units available, that may sit between devices to filter out CCs, or even specific CCs. There are certainly software filters available, I have at least one myself going back to DOS days that would do exactly what you need, but it would NOT be a help for your setup as it's PC/DOS. You'll need something you can load on your iPad, and can act on the data as it comes in.

Your problem has been mentioned before on this forum, certain hardware controllers, even some keyboards with controllers, generate far too much midi info and can overload the destination device(s).

A Google search for midi filter will bring up data, prob just a matter of finding which filter is most appropriate for your setup.

Update - have a look at a product called MidiFlow. On the basis of a quick read of the spec, this might help. Might even do exactly what you need. For example, you might change the channel of all the Sustain CC messages so that the data is sent to a channel that is not used and/or disregarded, which has the effect of removing the data without actually removing it. Even better if the playback device/package will itself take no notice of certain channels.
